The cleaned malting barley is delivered by truck or by ship. In Denmark, approximately 3 million tonnes of 2-row summer barley are harvested annually, of which more than one third consist of pure malting varieties. At Dragsbaek Maltfabrik A/S, about 140,000 tonnes of barley is malted yearly.

After cleaning and inspection, the barley is steeped in cylindro-conical steeping vessels with a capacity ranging from 30 to 33 tonnes.

The steep vessels, which are manufactured in stainless steel, are situated in closed, air-conditioned steep houses. Steeping water is preheated to the desired temperature before the steeping process commences. The addition of water, aeration and carbon dioxide extraction are carried out automatically.

Only the finest quality ground water from the Company's own wells is used. The quality of the water is controlled on a regular  basis according to the standards of drinking water.
